This question depends on how attentive the host of the meeting is. If they wish, they could very easily make sure that everyone knows when someone leaves a meeting. However, by default, Zoom doesn’t use an audible notification — play a chime — when someone leaves (or joins) a meeting.
It is definitely an invasion of privacy to monitor a student’s screen while they are taking a test or when they are doing anything for online school. It’s their personal computer most of the time which means it has personal things on it.
